Potato Coke

The Sweet Emblem of Valldemossa
Undoubtedly, the potato cake is the most representative sweet of Valldemossa, a real gastronomic treasure that has gained fame both on the island and beyond its borders. This spongy brioche, whose softness and characteristic flavor come from the use of potato in its preparation, is a delight that can be enjoyed at any time of the year.
The potato cake has become a symbol of Valldemossa's hospitality. In winter, it is customary to accompany it with a cup of hot chocolate, creating a perfect contrast between the warmth of the drink and the softness of the brioche. During the warmer months, it is common to enjoy it with ice cream, offering a refreshing experience that enhances its natural sweetness. This brioche has humble origins, but its recipe has been passed down through generations, becoming an icon of Mallorcan pastry. Although the recipe may vary slightly from family to family, the basic ingredients include boiled potato, sugar, lard, eggs, yeast and flour. The result is a soft and spongy dough that is baked until a perfect golden brown.

Ingredients and traditional recipe

200 g of boiled and mashed potatoes; 100 g of pork lard; 150 g of sugar; 2 eggs; 15 g of fresh yeast; 500 g of flour and a little salt
1. Mix the boiled potato with the lard and sugar until you get a homogeneous mass. 2. Add the eggs, integrating them well into the mixture. 3. Dissolve the yeast in a little warm water and add it to the dough. 4. Add the flour and salt little by little, kneading until you get a soft and elastic dough. 5. Let the dough rest until it doubles in size (approximately 2 hours). 6. Form small balls and place them on a baking tray. 7. Bake at 180°C for 15-20 minutes, until the cakes are golden and fluffy.
