200 g of boiled and mashed potatoes; 100 g of pork lard; 150 g of sugar; 2 eggs; 15 g of fresh yeast; 500 g of flour and a little salt
1. Mix the boiled potato with the lard and sugar until you get a homogeneous mass. 2. Add the eggs, integrating them well into the mixture. 3. Dissolve the yeast in a little warm water and add it to the dough. 4. Add the flour and salt little by little, kneading until you get a soft and elastic dough. 5. Let the dough rest until it doubles in size (approximately 2 hours). 6. Form small balls and place them on a baking tray. 7. Bake at 180°C for 15-20 minutes, until the cakes are golden and fluffy.
